Indredients

1kg mince chicken – 50/50 dark to light meat

6 spring onions – finely chopped

30g Essential Cuisine Miso

60g Essential Cuisine Peanut Free Satay Seasoning

30g olive oil – plus extra for your hands

Basting sauce

60g soy sauce

30g light brown sugar

30g mirin

Method

1. Preheat a griddle pan.

2. In a small saucepan add the soy sauce, sugar and mirin. Heat up to dissolve the sugar. Set aside to cool.

3. In a large bowl mix together the mince, Essential Cuisine Miso and Peanut Free Satay Seasoning, spring onion and olive oil. Once mixed divide into 20 balls, grease your hands and mould around 20 skewers.

4.Cook the chicken skewers on the griddle 10 minutes, turning and basting every 2 minutes.

5.Serve with sticky rice.
